I've been looking around for a while and can't find a solution. Is there a
way to add the word count to the status bar in Word 2003?

Not literally, but try View > Toolbars > Word Count. If you drag it to the
bottom of the window, it will dock between the status bar and the horizontal
scroll bar.

If you want it literally in the status bar, and automatically updating, then
you'll have to get Word 2007.
